This is a Pale Ale fermented 100% with a recently isolated local strain of brett and aged on Oak cubes.
After tasting some Firestone Walker beers I realised that I really love a little tanins to come and cut the flavors and bring a bit of dryness to a pale ale. This was also an experimental brew with Brettanomyces Nosferatum, a wild strain of Brett that I recently isolated from a contaminated batch of a local microbrewery.
Malt: 2 row, Munich, Carapils, Vienna, Blé malté
Hops: Columbus, Amarillo, Chinook, Simcoe, Citra
Yeast: Brettanomyces Nosferatum Blainvillus
